How many there are, and why not all of them
This page holds 1.906 emoji, taken from the official Unicode list (the same one phone keyboards use) and stopping at version Emoji 16. The newest ones are left out on purpose: on a great many devices they are still an empty rectangle, and a tool meant for copying should not hand you a little box.
The skin-tone variants are left out too, because on their own they would be another two thousand entries showing the same drawings five times over: the tone is chosen with the six dots at the top, and it applies to every emoji that accepts one.
Why the same emoji looks different across devices
Emoji are Unicode characters: when you copy one you copy a code, not a picture. It is then the system showing it (iOS, Android, Windows, the browser) that draws it in its own graphic style. That is why the same face can look slightly different on an iPhone and on a PC: the meaning stays identical, only the device's emoji font changes.
If you see an empty rectangle instead of the emoji, that device has an older Unicode set and does not know that symbol yet: it happens mostly with the emoji introduced in the last few years.
Where you can paste the emoji you copied
Once copied, an emoji pastes anywhere plain text is accepted: social posts and bios, WhatsApp and Telegram messages, email subjects, file names, Word documents, Git commits and even the title and meta description of a web page. In SEO titles use them sparingly: Google sometimes shows them in the results and sometimes strips them out.
