What it's for
End of dinner, the bill in the middle of the table and the arithmetic done with a phone in hand. Here you type the bill, the percentage you want to leave and how many people there are, and out come three numbers: the tip, the total and the share each. The third is the one that actually matters, because it's what everyone has to put in.
How much you leave, country by country
There is no universal rule, and that's the thing to know before travelling. In Italy tipping is optional and not expected: restaurants often charge a cover, and sometimes service is already on the bill (in which case you add nothing); if you enjoyed the service you leave a few euros, not a percentage.
In the United States it's another story entirely: 15-20% is considered due, because it's part of the pay of the person serving, and for large tables the percentage is often already added at the bottom of the bill (look for «gratuity» or «service charge» before leaving another). In the United Kingdom a 12.5% «service charge» often appears and can be removed on request. In Japan tipping isn't the custom and can cause discomfort: service is already in the price.
The arithmetic, and the quick way to do it in your head
Tip = bill × percentage ÷ 100; total = bill + tip; each = total ÷ people. To do it without a phone: 10% is the bill without its last digit, and you adjust from there. On a bill of 84 the 10% is 8.40, so 15% is 8.40 plus half of it (12.60) and 20% is double (16.80).
On the percentage there's a question people rarely ask: is it worked out on the total with tax or without? Where tipping is customary it's nearly always on the total before tax, but it's a matter of pennies and not worth the argument.
